Mango Mastani


Mango Mastani

Mago mastani is very popular drink from pune named after the queen mastani, wife of peshwa ruler baji rao. It’s prepared with mango puree, milk, ice cream, some fruits and dry nuts.



Ingredients:

To blend:

1 cup ripped mango roughly chopped (if using mango pure 1 can- 850g)

½ cup thick milk cold

2 scoops ice cream (I have used almond flavour however you can use vanilla, strawberry etc)

3 tsp sugar pwder

2 tsp rose water

For Mastani:

2 tsp almonds slices

2 tsp cashews slices

2 tsp pistachios slices

Few grapes sliced

Few strawberries

(You can use any fruit of your choice or you can add tutti fruitti)

Method:

In a blender add mango (or mango puree), milk, rose water, ice cream and sugar. Blend to smooth thick form. Keep refrigerated.

Serving-

In a glass, firstly add few pieces of mangoes.

Now pour prepared mango shake, leave space at the top for fruits and nuts.

(you can add a scoop of vanilla ice cream; I have skipped this as I kept my mastani simple with fewer calories)

Serve mango mastani chilled.

Thandai

Ingredients:

Full Cream Milk 1 1/2 litres
Almonds blanched and peeled 25
Cashew nuts soaked 20
Pistachios blanched and peeled 30
Melon seeds soaked 3 tablespoons
Poppy seeds soaked 3 tablespoons
Saffron a few strands
Sugar   1/2 cups ( you can increase the quantity of sugar to your taste)
Green cardamoms 8-10
Rose petals 20-25
Cinnamon 1 inch stick
Black peppercorns 6-8
Fennel seeds 1 tsp

Method:


Grind together almonds, cashew nuts, pistachios, melon seeds and poppy seeds with a little milk to a fine paste. Bring milk to a boil in a pan. Add saffron and mix.

When the milk begins to boil add sugar and simmer till the sugar melts. Grind green cardamoms, dried rose petals, cinnamon, fennel seeds, cinnamon stick and black peppercorns to a fine powder.

Add the paste to the milk and mix well. Simmer for three to four minutes. Add the powdered masala to the milk and mix well. Chill the milk and serve.

Note: if you want to store the Thandai Powder then , Dry roast green cardamoms, dried rise petals, cinnamon stick, fennel seeds and black pepper. In a mixer grind this mixture with rest of the ingredients mentioned above (no milk no sugar) To fine powder. Store in a glass bottle. In dry place.

Doodh cold drink

Ingredients:
2 cup milk (whole milk preferred for richer taste)
1 tbsp sugar
1 tbsp custard powder (vanilla flavour)
1 cup vanilla / apple ice-cream

Method:
  1. Mix ¼ cup of cold milk with custard powder, blend well and set aside.
  2. Boil the rest of the milk with sugar, turn the heat on low flame and add the above custard paste.
  3. Keep stirring till it is thick.
  4. Refrigerate it for 2- 3 hours.
  5. Serve chill with ice-cream.

Stawberry Milkshake

Ingredients:
2 pints strawberries, frozen or fresh
2 -3 cups milk (depending on desired thickness)
2 tablespoons sugar
1 teaspoon vanilla
2 -3 scoops vanilla ice cream (optional)

Method:

Put all ingredients into blender and blend until smooth.
Serve

Avocado Milkshake

Ingredients:
•2 to 3 cups cold milk
•1 ripe avocado
•3 tablespoons sugar
•handful of ice (optional)

Method:

Peel the avocado and cut in half. Discard the pit.

Put the avocado and sugar in a blender with 1 cup of milk. Blend until very creamy and smooth.

Gradually add another cup or two of milk to make the shake as thin or as thick as you like. How much milk you need will depend on the size of the avocado.

Add a handful of ice to the blender if you like your shake well-chilled, and blend for another minute. Pour into glasses, and serve.

Makes 2 to 3 servings.
